Abstract

Tofu is a protein food based on soybeans. Tofu is produced by extracting soybeans. Tofu is also one of the foods that contain very many nutrients that are quite easy to produce. It is not surprising that today we can find so many factories for making tofu, both in small and medium-sized businesses that still use conventional methods or businesses that are quite successful with more modern manufacturing methods. In small-scale industries, they complain about the time it takes to cut tofu manually, so it takes a long time. This study aims to design a tofu cutting tool using a pneumatic system, knowing how tofu cutting tools work, and knowing the comparison of time and energy efficiency. The research method used is the method of observation and experiment. The tofu cutting tool is designed to use the power from a compressor to move 2 pneumatic cylinders with a piston length of 150 mm. This study produces a description of a tofu cutting tool model that can be applied to small and large-scale industries. The time needed for manual tofu cutting is 52 seconds and 10 seconds using an automatic tofu cutter.
